Koji: Aspergillus Luchuensis

Fermentation Base: Biodynamic pearl barley (VIC)

Yeast: Shochu

Fermentation: Long

Distillation: Low pressure vacuum

 

TASTING NOTES

Aroma: Custard apple, vanilla and nutty cacao

Palate: Sweet with a hint of melon, layers of toasted coconut, vanilla, cacao, and hazelnut. It has a nice texture coming from a molasses-like flavour.

Finish: Soft and long

 

HOW TO ENJOY BARLEY SHOCHU

  • Straight up on ice
  • With soda, still or sparkling water
  • Pairs beautifully with pineapple, passionfruit, apple, ginger, and cinnamon.
  • In a Chuhai: A tall Japanese cocktail with soda and fruit
  • In a Old Fashioned: A short classic cocktail with bitters and citrus
